Usin g transformers will be OK as long as the output frequency from
the windmill doesnt drop much below 50HZ, which is 1000 RPM for a
3 phase alternator.
If it drops below 50HZ, the transformer efficiency plummets.
Most windmills which have 3 phase outputs rectify the AC to DC.
